There is just something about a nice cold refreshing salad in the summertime. This is one of our favorites because it is super easy and full of flavor. I hope you enjoy it too!
Italian Couscous Salad
This is the perfect summer side dish!
Ingredients
Homemade Croutons
- 1 French Baguette
- 1-2 Tbsp Olive Oil
- 1/2 tsp Black Pepper
- 1 tsp Kosher Salt
- 1 tsp Garlic Powder
Cousous
- 1-2 Cups Cooked Couscous
- 3-4 Tbsp Olive Oil
- 1 tbsp Dijon Mustard
- 1 tbsp Balsamic Vinegar
- 1-2 tbsp Lemon Juice
- 1/2 tbsp Minced Garlic
- 1/2 tsp Black Pepper
- 1/2 tsp Kosher Salt
- 1/2 tsp Italian Seasoning
- 1-2 Red, Orange, Or Yellow Pepper
- 1 Red Onion
- 1/2-1 Cup Hot Pepper Rings
Instructions
Homemade Croutons
- Preheat over to 250
- Cute and Cube French Baguette
- Toss baguette cubes in olive oil, salt, pepper, and garlic powder
- Spread seasoned baguette cubes on to a cookie sheet, back until softly toasted
Couscous Salad Dressing
- In a dish or salad dressing jar combine Olive Oil, Balsamic Vinegar, Italain Seasoning, Minced Garlic, Dijon Mustard, lemon juice, salt and pepper. Taste and add more of something if need be.
Couscous Salad
- Dice up bell peppers and onions add to the cooked couscous
- add in the Hot pepper rings
- Pour dressing over the couscous. Add a little at a time until you are happy with the taste.
- Stir in homemade croutons just before serving. If you plan to eat for a couple of days just add croutons after plated.
