Oh how I wish I could tell you that today was easy…..However, its Valentine’s Day. Enough said right? I mean the day is full of sweets and champagne and I can’t have any of it. The good news…its day 19!
I did wake up feeling pretty darn good and rested so there’s that!
My bacon consumption at this point might be frowned upon in the Whole30 world and maybe even by my doctor but… here I am surviving Whole30 on my terms! I honestly don’t think I can have eggs without it.
So I had full intentions of having Italian Beef for lunch and then later a nice steak dinner but….the Italian beef wasn’t ready. So, Chipotle it was! Just a reminder I get the Carnitas, Fajita Veggies, Guacamole, Pico de gallo, and Romaine Lettuce.
I did feel really good all afternoon and super freaking productive!
Since the Italian Beef wasn’t ready at lunch, it was what was for dinner! I had a side of cooked carrots, and Potatoes and onions that I baked.
- Dutch Oven
- 1 3lb Beef Round Roast Cook time will depend on size
- 1 16oz Jar Pepperoncini
- 4 Cups Beef Broth Whole30 if approved
- 1-2 tsp salt
- 1-2 tsp pepper
- 1-2 tsp garlic powder
- 1-2 tsp onion powder
- Preheat oven to 300°
- Place the Roast in the Dutch Oven
- Add the jar of pepperoncinis (you don’t have to add all the of the peppers but you do want all of the juice. I typically do half the peppers.)
- Add in the rest of the ingredients
- Cook in the oven for 5-6 hours or until it is falling apart
As far as sleep…. I was emotionally drained (dogs should live forever) so I crashed on the couch and then woke up and moved to the bed. It was still really good sleep even if I started on the couch.
