Day 12…. I’m not going to lie I woke up hoping it was day 31…. I just want a fun coffee drink!!
Breakfast
This morning was a bit crazy so before I headed out the door I grabbed my coffee and 2 strips of bacon.
Energy wise I was pretty good. I was able to hit up Starbucks for the boys in Target and I didn’t get the coffee drink I have been dreaming of. It took everything in me to not blurt out I want a Venti Carmel Macchiato but I didn’t do it.
Lunch
Lucky for me, that roast the night before made enough for lunch the next day too. One of the hardest things for me with Whole30 is the amount of time you spend in the kitchen so anytime there is enough for leftovers I get pretty darn excite. I will say the roast made excellent leftovers so I will be sure to get an even bigger roast next time!
I did hit a wall mid afternoon but honestly it was because I had a headache. This was my own fault for sure. With such a busy morning I definitely didn’t drink enough water. Plus it is that time fo the month so I probably needed a little more food than I was eating too. So I took a quick 15 minute power nap and I was good as new!
Dinner
Dinner was just what I needed. I had Flank Steak marinated in olive oil, salt, and pepper. A baked potato with Everything But The Bagel Seasoning. My favorite Brussels sprouts and bacon. A salad with peppers, onion, cucumbers, carrots, and homemade dressing. I also made a Chimichurri Sauce for on top of the steak! So good, so filling, so satisfying!
Chimichurri Sauce
Equipment
- Food Processor
Ingredients
- 1 cup Fresh Cilantro
- 3/4 cup Parsley
- 2 tbsp Minced Garlic
- 1/8 cup Balsamic Vinegar
- 1 tbsp Lemon Juice
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 3/4 cup Olive Oil
- 1 tbsp Brown Mustard
- 1/2 tsp Crushed Red Pepper
Instructions
- Toss it all into a food processor. Pulse until it is all chopped up and combined.
- Then taste it. Add anything extra you want if you feel like it needs anything.
- Once you get it to taste to your liking let it rest in the Fridge for 20 minutes before serving.
Notes

Homemade Oil and Vinegar Dressing
These are rough estimates to help get you started.
Ingredients
- 1/2 cup Olive Oil
- 1/4 cup Balsamic Oil
- 1 tbsp Kosher Salt
- 1/2 tbsp Pepper
- 1/2 tbsp Minced Garlic
- 1 tbsp Whole30 Compliant Spicy Mustard
- 1/4 tbsp Oregano
- 1/2 tbsp Lemon Juice to taste
Instructions
Add it all to a Salad Dressing Bottle.- Shake well
- Taste
- Add more of whatever you think it needs.
- Repeats steps 2-4 until you get the taste you want
- Refrigerate for at least 30 minutes before using.
