Oh day 11…. you are suppose to be another one of the hardest days. I woke up feeling good and refreshed.
Breakfast
I actually didn’t have anything for breakfast. I couldn’t do another day of eggs and I honestly just wasn’t hungry…. I know this is not the Whole30 way but I love to fast in the morning.
I continued to be crazy productive and feel good throughout the whole morning.
Lunch
I knew since I fasted through breakfast I needed a good lunch so I made Sloppy Joes with sweet potatoes. Here is the recipe I follow. I do make a few changes. Instead of making sweet potato buns I just make sweet potato home fries. I also toss in a couple of dates to really sweeten it up after the ground beef is browned. This is definitely a filling and satisfying meal!
Lunch kept me satisfied throughout the afternoon and evening. I was super productive and didn’t hit a mid afternoon slump.
Dinner
Was out of the very popular (in our house anyways) Whole30 Fast & Easy Cookbook . I made Balsamic Beef and root vegetables. Instead of parsnips I did onions. Instead of the crockpot I did a Dutch oven on the stove and then in the oven. Other than that I followed the recipe and it was so good. My husband even said “THIS IS THE BEST ROAST YOU HAVE EVER MADE.” So, if you have been on the fence about grabbing this cookbook…I would probably grab it!
Sleep
Minus another night of a kid not sleeping for whatever reason….I slept amazing the few windows I got! It was so amazing that even thought it didn’t amount to much I still work up feeling refreshed!
