I am not going to lie, day 1 was easy! I mean it was only day 1 after all. I did wake up early enough to to get a workout in which has honestly been a struggle since before Christmas. There is just something about a change that gets you so freakin’ motivated, right?
Weigh In
After my morning I did do a weigh in……I weighed in at 134.5lbs. I do not do Whole30 just for weight loss. I do it for my overall health but the bonus is the pounds that do come off.
Breakfast
My first meal of the day was 2 eggs over medium fried up in olive oil with a side of hot coffee! Eggs can get rather boring so I like to top mine with different things throughout the journey. Day 1 I topped them with everything but the bagel seasoning and some Frank’s Red Hot Sauce!
Like I have said our plates don’t always fit the perfect Whole30…. I probably should have had a little more fat and maybe a veggie but this is what works for me and it keeps me pretty satisfied.
Lunch
Lunch was so dang good! We had Thai Chicken and Brussels Sprout Skillet from the Whole30 Fast & Easy Cookbook. I totally recommend picking up this cookbook because everything looks and sounds so good! I did however find the same recipe for you here. This was the first time I had made this recipe and I was shocked at how quick and easy it really was. Even the baby of the family thought it was good!
That moment between lunch and dinner I didn’t really get hungry until about an hour before dinner. I did get a little on the sleepy side but I chugged some ice water and it definitely made a difference.
Dinner
Dinner was one of our go to meals on and off Whole30! I promise I took a pic and all for you but my iPhone decided not to save it….so you will have to just use your imagination. I marinated a Flank Steak in olive oil, minced garlic, salt and pepper for about 30 minutes and then grilled it up! We had baked potatoes with ONLY everything but the bagel seasoning and a salad with a homemade oil and vinegar dressing (see recipe below). This is a great filling option for dinner!
Homemade Oil and Vinegar Dressing
These are rough estimates to help get you started.
Ingredients
- 1/2 cup Olive Oil
- 1/4 cup Balsamic Oil
- 1 tbsp Kosher Salt
- 1/2 tbsp Pepper
- 1/2 tbsp Minced Garlic
- 1 tbsp Whole30 Compliant Spicy Mustard
- 1/4 tbsp Oregano
- 1/2 tbsp Lemon Juice to taste
Instructions
Add it all to a Salad Dressing Bottle.- Shake well
- Taste
- Add more of whatever you think it needs.
- Repeats steps 2-4 until you get the taste you want
- Refrigerate for at least 30 minutes before using.
Notes

I wish I could say that was it but I was still hungry…. so I did have an apple and Almond Butter. I know this is “Cheating” but its Whole30 approved items. I did warn you that I DO NOT do a perfect Whole30. I will however still get results!
Sleep
Oh sleep….there is nothing better than the sleep you get when you are doing Whole30. It doesn’t mean you don’t wake up but I tell you what when you are asleep you are sleeping like a ROCK! Even just one day of no dairy and no sugar, I noticed a difference.
Day 1 is in the books! Bring on day 2!!
